Quick frozen Redcurrants (Jonkheer-Van-Tets Variety - variety may vary subject to availability) prepared from fresh clean, sound berries by cleaning, processing, sorting and freezing in accordance with good commercial practice. The dimensions of the berries should be 5 - 15mm. Frozen free flowing berries should possess a clean, delicate natural favour of Redcurrant with no off flavours present. The Redcurrants should exhibit a consistent ripe red colour with little variation. The texture of the berries should be good with all berries firm but succulent. Stalks should be absent in a given sample. The process should ensure stability of colour and flavour and product temperature shall be lower than - 180C. The samples should always be examined and the grades ascertained by trained personnel experienced in quality control procedures.
